Blueberry Oat Bars

I’ve just been adding blueberries to my basic oat bar recipe – the same base from which all the variations  were created.

Blueberry Oat Bars

4 cups of oats
5 cups of eggbeaters
2 cups (1 whole bag) frozen blueberries
1/4 cup Splenda
1 tsp – 1 Tbs cinnamon, to taste (I like a lot)

Preheat oven to 425. Mix all. Pour into a 9 x 13 baking dish sprayed with cooking spray. Cook for 30-35 minutes. Cool, cut into 12 squares. Refrigerate overnight before eating. Store in fridge.

Makes 12. For each:
163 cals
1.75 g fat
22 g carb
3 g fiber
15 g protein

By the way, a friend of mine here is completely hooked on these and keeps tweaking them and playing around with the recipe. She added a half cup of quinoa to her last batch and says it’s awesome … Do other people in the USA know what “Quinoa” is or is that just a a hippy-dippy West Coast thing ??

Amyella (pronounced Amy-ella) is a pseudonym for Amy Levitt, a fitness and health food fanatic and a beach girl at heart. She has been sharing her sometimes nonsensical thoughts and self-amusing stories online since 2002 and currently spends a good deal of her time wrangling her 90 pound Rottweiler and 60 pound Boxer. Which is quite a show.
The origin of the name Amyella.

Here's my deal. It's wicked exciting!
