Because You Know You Would Too

HP: So in the middle of my workout I’m at the water fountain re-filling my bottle and I get a tap on my shoulder. I turn around and it’s the ex.

Me: Oh, I didn’t realize that she lives so close to us. Or goes to the same gym.

HP: Yeah, kinda close, not too close. But, yeah, she works out there.

Me: Great, now I have to start wearing make-up to the gym. Pain in the ass.

Listy Love

First thing to check off the list: yesterday 40/40/20 day – check! DOMS-inducing workout- check!

So, for today, here’s the plan:

-get up, drink coffee, eat breakfast: oats and egg whites
-apply to jobs
-follow up on previously applied to jobs, where possible
-lunch: chicken salad, cucumbers
-Petco: Easton’s new collar and Goose
-take world’s oldest laptop to Best Buy to donate
-while at Best Buy, find birthday present for HP
-pre-workout snack: cottage cheese, oats, blueberries
-workout: legs, abs, cardio
-post-workout: protein shake
-pack comforter
-start packing clothes
-dinner: tuna, salad

I went through the closest last night and managed to compile one more bag of stuff to donate, mostly old handbags, sunglasses, and wallets and just a couple of clothing items. I almost cannot believe I move in three days. Crazy!

Man-Friendly Diet Food

So here’s a list of dinner ideas that I’ve put together that meet my criteria:

-healthy (duh!) and close to the 40/40/20 range
-get the thumbs up from HP to become part of the regular dinner rotation

Some you’ll recognize from here, and some are new (and even untried). I’ll let you know which ones past the HP test.

Peanut Thai Chicken with snow peas over brown rice
Baked Buffalo Chicken Tenders with low fat mac and cheese
Chicken Pot Pie with Polenta crust
Ziti, Chicken and broccoli
Light Chicken Scampi
Turkey Meatballs (passed!)
Maryland Crab Cakes with salad
Outback Steakhouse Filet Mignon
Lean hamburgers with Baked Sweet Potato Fries
Steak Fajitas
Pantry Chili
Taco Salad (passed!)

Moving Madness

It’s t-minus three days until the big move! Everything is packed except for my bedroom, some tupperware (to eat out of), utensils (to eat with), and my vitamins. I am so thrilled to get out of this place and into our (OUR!!!) new place in a few days.

I am pretty sure that I have donated or sold more stuff than I’ve packed to take with me. I ended up selling my ice cream maker, wok, mixer, blender, platter, area rug, faux floor plants, scanner, armoire, wooden shelves, photo album, lamp, wall art, glassware, and treadmill. This is what I ended up donating to the Vietnam Vets:

HP is going to start moving stuff over Wednesday night, I’ll head down there Thursday morning and we’ll finish moving his apartment and spend the night in the new place. Friday morning we pick up the U-haul (and a couple of laborers) and move my place. I have to be out by Friday afternoon. Of course my goal is to be mostly unpacked and organized by Sunday evening.

And we want to get in our regular Sunday morning workout. Of course we do.

So speaking of regular workouts, mine have been ok. I’m really looking forward to establishing a new routine, I think it will help a lot, especially since HP is really good about hitting his workouts every week and we’ll be heading to the gym together, at least in the beginning.

One thing I’ve been working on is putting together a compilation of recipes that will be in our regular dinner rotations, since we’ll be eating together pretty much every night. Fortunately, HP eats really healthy, but obviously not  crazy-person-dieting-clean so I’m looking for that balance of a complete meal that will satisfy a big man but still fit into the meal plan of a small girl constantly striving for the ultimate leanness. My game plan is to try to keep my calories fairly low throughout the day so I can take in the bulk at dinner time, when we’ll be enjoying a meal together, and also stay focused on 40/40/20.

I’m not worried. 🙂

Adventures In Getting To The Gym

Yesterday afternoon I was pretty pumped to get to the gym but, per usual, come 4:00 or so I was not looking forward to it. I left the office telling myself I had to go even though I didn’t feel like it and so the old internal argument went. The back and forth of “I don’t wanna” versus “I don’t care if you wanna, you go!”

Driving down the toll road I still wasn’t 100% certain I was going to get off at the exit leading me to the treadmills but when all was said and done, I did. I pulled into the gym parking lot and had a pep talk with myself, getting pumped, thinking about the beach this weekend, visualizing myself in a bathing suit, thinking through the run and how it only sucks in beginning and then start to feel great.

A couple of minutes later and I was ready!

I went inside, perusing the cardio equipment, seeing if my favorite treadmill was open. I hit the locker room to change, opened my gym bag and…no sneakers.

This morning I’m at the red light just before the gym plaza and it’s about 6:05 in the morning, so it’s past sunrise and clear and bright outside. To my right is the big Oracle sign outside of, uh, the Oracle building and I see movement. I look and the first thing that pops in my head is “wow, is that a big cat or what?” Then it comes out completely behind the bush and it’s a fox!! A red fox!! Clear as day and just hangs out there, then walks a couple feet and another fox comes out behind the bush too! Then the two of them are just standing there, hanging out on the Oracle sign like some kind of Disney characters. I mean, it’s not that I’ve never seen fox before but usually they’re darting across the street or scurrying into the woods. I got a really good look at these guys and it was cool.  Or perhaps I’m just easily impressed.

For the record, I had a great run.

Spicy Tomato Lentil Soup

I bought some lentils the other day because I’ve never cooked with them before and they are supposed to be quite healthy. With a trip to the beach coming up this Saturday I’m on a mission to keep the eats ultra clean this week.

I looked online and found a few different recipes, then made this based on what I had in the house. It’s quite tasty and has a good kick! If you want to tone down the spice then only use 1 dried chili pepper.

Spicy Tomato Lentil Soup

1 clove garlic, finely chopped
2 dried chili peppers, chopped
1 cup lentils
1 (14.5 ounce) can peeled and diced tomatoes
2 cups waters
1 packet Herb Ox sodium free chicken bouillon
salt and pepper to taste
1 tsp ground cumin
1 teaspoon dried basil

Spray a saucepan with cooking spray and add the garlic. Lightly brown the garlic and add the tomatoes, chili peppers, lentils, cumin and basil to the pan along with the water. Bring to a boil, then reduce heat to medium-low and simmer for about 20 minutes, or until the lentils are tender.

When the lentils have softened, puree the soup in a blender. Season to taste with salt and pepper.

Makes 4 servings, each:

.5 g fat
34 g carb
15.5 g fiber (leaving 18.5 g net carb)

I Guess We All Need Our Own Room

You guys, seriously, Kima loves her cage! We were taking a nap on Saturday afternoon and could hear the dogs wandering around the house. Finally I heard a noise that led me to assume that Easton had wandered into Kima’s cage. HP looked up and nudged me, “she’s lying down in her cage.”

I wouldn’t have believed it if I hadn’t seen it with my own eyes. I looked up and there she was, just lying down, chillin’ in her cage with the door open.

Too freakin cute.

Here's my deal. It's wicked exciting!
